Vy's Story on Steamed Egg - Chả Trứng

Vietnamese Steamed Egg - Chả Trứng

The steamed egg I shared here normally goes with the Vietnamese broken rice and fish sauce. That is my favorite dish back home. However, since I study abroad, I figured out that cooking this dish is very easy, and it can go with normal rice too. Therefore, I try to cook this once in a while to get the home-taste from it. This recipe may not be fully accurate compared to others, but it is how my family will cook it. I hope you guys can try to follow the instructions and make the dish yourself as well. Hope you enjoy it!

Ingredients:

2 eggs

250 gm of grounded pork

20 gm of vermicelli

½ carrot

4 mushrooms

Green onion

1 teaspoon of salt

½ teaspoon of seasoning

1 teaspoon of sugar

½ teaspoon of fish sauce (optional)

Recipe Procedure:

1. Chop vermicelli, carrot, mushrooms and green onion finely (as small as you can)

2. In a medium size bowl, add grounded pork, chopped vermicelli, carrot and mushrooms in. Add salt, seasoning, sugar and fish sauce (can adjust based on your taste) in the bowl, mixed well.

3. Separate egg yolk and egg white. Add egg white into the bowl in step 2, mix well. In another bowl, mix the egg yolks well. Cover the bowl with mixture using a plastic wrap to avoid water coming into the bowl while steaming.

4. Prepare a steam pot (you can use a normal pot and place a little cap/ tools in) and put the bowl with mixture in. Add water into the pot until it reaches the bottom of the bowl.

5. Place the cover on the pot, turn the heat on until the water boils, lower the heat to keep the water boiling. Checking the water level normally (add more water if needed). Steam in 20 minutes, open the plastic cover, add the mixed egg yolks with green onion and a bit of pepper on. Recover the bowl and let it steam for 5 more minutes. Use a toothpick or folks, pock in the product to check if it is fully cooked yet or not. If the toothpick/ fork looks wet, let it cook more until the toothpick/ forks looks dry.

6. Serve with rice.
